    Potatoes Au Gratin

    INGREDIENTS

    • 4 russet potatoes, sliced into 1/4 inch slices
    • 1 onion, chopped
    • salt and pepper to taste
    • 3 tablespoons butter
    • 3 tablespoons all-purpose flour
    • 1/2 teaspoon salt
    • 2 cups milk
    • 1 1/2 cups shredded Cheddar cheese

       DIRECTIONS

    1. Preheat oven to 400 degrees F (200 degrees C). Butter a 1 quart casserole dish.
    2. Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the copped onion, and add the remaining potatoes. Season with salt and pepper to taste.
    3. In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
    4. Bake 1 1/2 hours in the preheated oven.

    Lemon Jello Cake

    LEMON JELLO CAKE from my cousin Audrey
    ----------------

      1 pkg. lemon Jello
      3/4 c. cold water
      4 eggs
      3/4 c. salad oil
      1 pkg. lemon cake mix
      2 c. confectioners' sugar
      Juice of 2 lemons or 5-6 tbsp. ReaLemon

    Combine lemon Jello, cold water and eggs. Beat 2 minutes.
    Empty cake mix in bowl. Add Jello mixture and oil. Beat 1
    minute. Pour into 9"x13" pan. Bake at 350 degrees for 45
    minutes. Remove from oven. Prick full of holes with a long
    tine fork. Combine confectioners' sugar and lemon juice.
    Pour evenly over hot cake.

    Fried Onion Rings

    • 2 large sweet onions
    • 1 egg, lightly beaten
    • 2/3 cup water
    • 1 tablespoon canola oil
    • 1 teaspoon lemon juice
    • 1 cup all purpose flour
    • 1 & 1/2 teaspoons baking powder
    • 1 teaspoon salt
    • 1/4 teaspoon pepper (or you may use cayenne pepper)

    Canola oil for deep-fat frying...

    Cut onions into 1/2 inch slices; separate into rings.  Place in a bowl and cover with ice water and soak for 30 minutes.  Meanwhile, combine egg, water , oil and lemon juice in a bowl; mix well.  Combine flour, baking powder, salt and pepper;  stir into egg mixture until smooth.  Drain onion rings on paper towels, dip into batter.  Heat 1 inch of oil in a deep fat fryer to 375 degrees.  Fry onion rings, a few at a time, until golden brown.  Drain on paper towels.

    Peanut Butter Fingers

    • 1/2 cup margarine
    • 1/2 cup white sugar
    • 1/2 cup brown sugar
    • 1  egg
    • 1/3 cup peanut butter
    • 1/2 teaspoon soda
    • 1/4 teaspoon salt
    • 1/2 teaspoon vanilla
    • 1 cup flour
    • 1 cup quick oatmeal
    • 1 cup chocolate chips

    Topping, 1/2 cup powdered sugar, 1/2 cup of peanut butter, and 4 tablespoons milk combined.

    Cream margarine, sugars, egg, and peanut butter.  Mix together soda, salt, flour, and oatmeal.  Mix together with the creamed mixture.  Spread in greased 9X9 pan.  Bake in preheated 350 degree oven for 20 - 25 minutes.  Remove from oven and sprinkle with chocolate chips.  Let stand for 5 minutes and then spread chocolate chips  evenly across the top. Drizzle topping over melted chocolate.  Colol, slice into thin pieces.

    Buttermilk Pie

    • 1 & 1/2 cup sugar
    • 1 tablespoon flour
    • 3 beaten eggs
    • 3/4 cup buttermilk
    • 1/8 cup melted butter
    • 1 teaspoon vanilla
    • 1 unbaked pie crust.

    Preheat oven to 325 degrees. 

    Mix sugar and flour together.  Add beaten eggs, buttermilk, melted butter and vanilla.  Pour into unbaked pie crust.  Bake for about 60 minutes until set.
