    Chocolate Mug Cake

     The most dangerous cake recipe
     
    MINUTE CHOCOLATE MUG CAKE
     
    1 coffee mug
    4 tablespoons flour (plain flour, not self rising)
    4 tablespoons sugar
    2 tablespoons baking cocoa
    1 egg
    3 tablespoons milk
    3 tablespoons oil
    3 tablespoons chocolate chips (optional)
    small dash of vanilla
     
    Add dry ingredients to mug and mix well.
    Add the egg and mix thoroughly.
    Pour in the milk and oil and mix well.
    Add the cholate chips and vanilla and mix again.
    Put the mug in the microwave and cook for 3 minutes at 1000 watts.  The cake will rise over the top of the cup, but don't be alarmed.
    Allow to cool a little and tip out onto a plate if desired.
    this can serve 2 if you want to share!

    Chewy Coconut Cookies

     

    Yield: 4 dozen cookies

     

    • 1/2 cup butter or margarine
    • 1/2 cup brown sugar
    • 1/2 cup granulated sugar
    • 1 egg
    • 1 1/4 cups unsifted flour

    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 teaspoon vanilla
    • 1 1/2 cups flaked coconut

    Preheat oven to 375 degrees F.

    Cream butter until fluffy. Add sugars gradually, beating well after each addition. Add egg and mix. Combine flour, soda and salt; then add to butter mixture, 1/4 at a time. Add vanilla and coconut. Drop by teaspoonful on ungreased baking sheet. Bake at 375 degrees for 9 minutes or until cookies begin to brown. Cool and store.

    Apple Butter Cookies

     
    Preheat oven to 350 degrees.  Spray cooky sheet with cooking spray.
    • 1/2 cup margarine or butter, softened
    • 2 cups brown sugar, packed
    • 2 eggs
    • 1 cup oats
    • 1 cup apple butter
    • 2 cups flour
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 3 tablespoons milk
    • 1 cup nuts, chopped
    • 1 cup raisins

    In a mixing bowl, cream margarine (or butter) and sugar.  Beat in eggs and apple butter. Combine flour, oats, baking soda, baking powder and salt.  Add to mixture gradually along with the milk.  Beat until blended.  Stir in nuts and raisins.  Chill for several hours or overnight.  Bake for 15 minutes.  These are nice with a powdered sugar glaze.

    My Own Fruitcake Recipe

    I used to make fruit cakes every year for my friends that liked them.  Through the years I had devised a recipe that worked the best for me.  I haven't made any for the last few years but this year I plan to make at least one.  Don't even read the recipe if you don't like fruitcake.  lol
    • 3 cups flour
    • 2 teaspoons baking powder
    • 1 teaspoon salt
    • 1lb of candied red cherries (cut in half)  add more if you want
    • 1 lb of candied green cherries (cut in half)  add more if you want
    • 1lb of candied pineapple(cut in chunks)  add more if you want
    • 1 box of golden raisins
    • 1 cup of walnuts broken
    • 1 cup of pecans broken
    • 1 cup margarine or butter (softened)
    • 1 cup white sugar
    • 1 cup brown sugar
    • 4 eggs
    • 1/2 cup applesauce
    • 1 small jar orange marmalade

    Preheat oven to 275 degrees.  Spray 3 or 4 medium size loaf pans with cooking spray.  Line bottom of pan with wax paper, then spray again.

    Stir together the flour. baking powder and the salt and set aside.

    Cream the butter, sugars, eggs and applesauce together.  Add the flour mixture, then fold in the fruit and nuts.  Make sure you are using a very large bowl.  Pour into prepared pans.  Decorate the tops with extra cherries, pineapples and nuts.   Bake for approximately 2 hours.  Check for doneness after 1 and 1/2 hours depending on the size of pan you are using.  Cool, put in a tin container and soak with golden rum and do this every week until time to eat it.  Keeps months in the fridge and is just a good frozen.

    Easy Apple Crisp

    • 4 tart apples, peeled, cored and sliced
    • 1/2 cup sugar
    • 1/2 teaspoon cinnamon
    • 1/4 cup of hot water

    Place apples in a casserole dish and cover with the sugar, cinnamon and hot water.

    Batter:

    • 1 egg (beaten)
    • 1/2 cup sugar
    • 1 tablespoon melted butter
    • 1/2 cup flour
    • 1 teaspoon baking powder

    Mix the batter ingredients together and pour over the top of the apples.  Place bits of butter over the top.  Bake in a preheated 375 degree oven about 25 minutes or until apples are done.  The apples should be soft and the topping a golden brown.

    Stephen's Easy Chicken Pot Pie

    • One regular crust Pillsbury pie crust – use both as they come in packages of two.
    • Two cans of regular size  VegAl
    • Two cans of good, already cooked chicken in water – Swanson has some good stuff
    • Cheddar cheese, shredded, mild or sharp – Just enough to make it a bit cheesy, but this is to taste really.
    • One can of Campbell’s Cream of Chicken soup

    Season to taste, garlic (chopped or minced), Lawrey’s Seasoned Salt, Fresh cracked pepper corns.  You mix all these pretty much after draining what needs to be drained, meaning most of it. Then place in a thawed pie shell. Cover with the second pie crust.   Crimp edges and poke holes in the top. Cover with an egg wash and place in a 350 degree preheated oven for about 30 minutes or until top is browned nicely.  Comes out wonderful and you really didn’t have to do much. One pie feeds two people quite well – also stores in the fridge pretty well for several days too.

     

    Apple Brown Betty

    My mom used to make this.
     
    • 2 cups soft breadcrumbs
    • 1/4 teaspoon salt
    • 1/4 cup melted butter or margarine
    • 4 cups tart sliced apples (4 medium apples)
    • 3/4 cup light brown sugar
    • 1 teaspoon ground cinnamon
    • 2 Tablespoons lemon juice
    • 1/4 cup water at room temperature
    Preheat oven to 350 degrees 

    Mix the breadcrumbs with the salt and melted butter or margarine, and divide the mixture into three. Place one-third in a greased 1-1/2 quart baking dish.

    Sprinkle your apples with sugar, cinnamon, and lemon juice,  and toss to blend. Place one-half of this mixture on top of the crumbs in the baking dish. Add another one-third of the crumbs, then the remaining apples, and a final layer of crumbs. Trickle the water into the side of the dish to as not to moisten the top layer of crumbs.

    Cover and bake in the oven for 30 minutes. Remove the cover and continue to bake until the apples are tender and the crumbs a golden brown, about20 minutes. Serve warm with whipped topping or ice cream.

    Ham and Beans

    You will not believe this and I am still smiling.  My new sis in law sent me an email this morning asking me how to fix ham and beans.  I thought everyone was born knowing how to do this.  Maybe not, so here are the instructions I gave her.
     
     
    1.  Sort through beans and pick out rocks, etc.
     
    2.  Rinse beans a couple of times.
     
    3.  Pour boiling water over the beans in the pan you are going to cook them in.  Cover and let sit for half an hour. 
     
    4.  Drain beans.  Add 1 chopped onion.  Cover with water but don't drown the beans.  LOL  Add ham bone or bits of ham.
     
    5.  Bring to a boil, cover,then turn heat down to simmer and cook till done.  Remove the bone and put ham from bone back into the beans.
     
    6.  Season to taste.
     
    Now get busy and make some corn bread!!  Smile
