Easy Oven Fried Potatoes

Ingredients:

  • 4 medium potatoes
  • 3 tablespoons melted butter or mixture of equal parts butter and oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper, or to taste
  • 1/4 teaspoon paprika

Preparation:

Peel potatoes then cut crosswise into 3/8-inch slices. Brush with melted butter and oil.

Bake at 425°, basting frequently with butter or butter mixture until tender and golden brown on both sides. Sprinkle with salt, pepper, and paprika; serve immediately.
Serves 4

German Potato Salad

12 oz. bacon
2 tbsp. flour
1 1/2 tsp. salt
1/2 c. vinegar
2 tbsp. sugar
1 tsp. celery seed
6 med. potatoes
1 c. water
1/2 c. chopped onions

Boil potatoes with peel on and cool. Cook bacon until crisp, saving 1/4 cup fat. Cook onions in fat until tender, blend in flour, sugar, salt, celery seed and dash of pepper. Add vinegar and water, stir until thick and bubbly. Add potatoes (sliced) and bacon (crumbled). Toss carefully and heat thoroughly. Serve hot. Keeps well and can be reheated. I like to serve some bacon crumbles and sprinkle on top.

Fried Onion Rings

  • 2 large sweet onions
  • 1 egg, lightly beaten
  • 2/3 cup water
  • 1 tablespoon canola oil
  • 1 teaspoon lemon juice
  • 1 cup all purpose flour
  • 1 & 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper (or you may use cayenne pepper)

Canola oil for deep-fat frying...

Cut onions into 1/2 inch slices; separate into rings.  Place in a bowl and cover with ice water and soak for 30 minutes.  Meanwhile, combine egg, water , oil and lemon juice in a bowl; mix well.  Combine flour, baking powder, salt and pepper;  stir into egg mixture until smooth.  Drain onion rings on paper towels, dip into batter.  Heat 1 inch of oil in a deep fat fryer to 375 degrees.  Fry onion rings, a few at a time, until golden brown.  Drain on paper towels.

Fried Green Tomatoes

 

  • 1 & 1/2 cups of cornmeal
  • 4 tablespoons of flour
  • 1 egg
  • salt and pepper to taste (probably about 1/2 teaspoon of each)
  • green tomatoes sliced  uniformly

Mix all  ingredients (except tomatoes) together with enough milk to form a batter that will coat the tomato slices evenly.  Don't get it too thin.  Fry  the tomato slices in hot oil, turning to brown evenly on both sides.

***This recipe is from Rae's son-in-law.  He never measures he says.  They all love these in WV.  I don't like fried green tomatoes but I loved the movie. 

Mom's Fried Sweet Potatoes

 
My mom fixed these when I was a child.  I really loved them.  Unfortunately with 7 brothers and sisters you were lucky if you got more than a taste at a time. 
 
  • 4 large sweet potatoes or yams
  • Canola oil for frying

Wash and peel the sweet potatoes.  Slice the potatoes in thin slices.  Fry in the hot oil until browned on both sides.  Remove to paper toweling to drain and sprinkle top with sugar.

I have noticed lately that quite a few restaurants are serving french fried sweet potatoes.  That is another option.  Just slice as for fries and use a deep fat fryer.

Calico Beans

 
This recipe is from cousin Joan.
 
  • 1/2 lb ground beef
  • 1/2 lb bacon cut up
  • 1 onion diced
  • 2 tablespoons vinegar
  • 1/2 cup catsup
  • 1 cup brown sugar
  • 1 can pork and beans
  • 1 can drained butter beans
  • 1 can drained kidney beans

Brown bacon and onion.  Add hamburger and brown.  Drain off fat.  Mix sugar, vinegar and catsup.  Add to beans.  Bake 350 degrees  for 1 hour.

**Joan doesn't say what size pan so you be the judge of that.  I have tasted this dish and it is delicious!

Ebby's Homemade Noodles

 
  • 2 cups flour
  • 1/2 teaspoon salt
  • 3 egg yolks and 1 whole egg beaten together
  • 3 eggshells of water

Stir the flour and salt together in a large bowl.  Put in the beaten eggs and the 3 eggshells of water.  Blend together with a fork until you can form a ball.  Divide the ball into two small balls.  Roll each ball out separately on floured surface until 1/8 inch thick.  Cut into two inch wide strips and let dry for about one hour and thirty minutes.  Turn every 20 minutes.  A tiny bit more flour can be sprinkled on to the noodle dough to help it dry faster.  Lay the strips on top of each other in 3 layers and cut into desired length.  Cook noodles in boiling broth until done.

 

***I loved to go to my sister's house and see noodles all over the kitchen counter.  I knew then we were having beef and noodles.  I can still taste it.

Corn Bread Dressing

 
This is my sister Rae's recipe.   She fixes it to go with turkey, chicken, pork loin, etc.  You name it.  It is by far the best dressing I have ever eaten.  Rae says that she has to give credit to her friend Faye for the original recipe.
 
  • 8 cups of bread crumbs
  • 4 cups of cornbread crumbs
  • 1 small or 1/2 large onion minced
  • 1 cup finely chopped celery
  • 1 & 1/4 tablespoons salt
  • 1 & 1/2 tablespoons sugar
  • 1 teaspoon pepper
  • 2 teaspoons poultry seasoning
  • 1 cup of butter melted
  • chicken broth (as much as you need) canned or homemade

Cook onion and celery in water or chicken broth until tender.  Remove from heat and stir in the seasonings.  Add to the bread and cornbread crumbs which you have placed in a very large bowl.  Add melted butter.  Add chicken broth to the mixture.  Use as much as you need for the right consistency.  Mix all ingredients together well.  Place in large baking dish and bake in preheated 350 degree oven until browned.

 

 

Three Corn Casserole

 
Just about everybody I know makes this.  The recipe was given to me by my daughter quite a few years ago.  I love it.  The original recipe called for a stick of margarine.  I cut it down to 1/2 stick and it tasted just as good to me.
 
  • 1 can whole kernel corn
  • 1 can cream style corn
  • 1 pkg Jiffy Corn Muffin Mix
  • 1 egg
  • 1/2 stick of margarine (sliced)
  • 1 cup sour cream

Mix all ingredients together and pour into a 13 X 9 greased baking dish.  Bake in a 375 degree preheated oven for 45 min to 1 hour.  The top should be golden brown.

Sweet Potato Souffle

 
This is my niece Deana's recipe.  Yummy!!!
 
Step 1.
 
2 lbs canned sweet potatoes
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla
1/3 cup brown sugar
1/4 cup soft margarine
 
Drain sweet potatoes.  Mash together thoroughly with all of the ingredients listed above until smooth.  Pour into a round casserole dish sprayed with cooking spray.
 
Step 2.  Topping
 
1/4 cup margarine
1/3 cup brown sugar
3 tablespoons flour
1/2 cup chopped pecans
 
Mix topping ingredients with a pastry blender as for pie crust.  Sprinkle on top of filling.  Bake in a preheated 350 degree oven for 35 - 45 minutes.
